omgomgomg i know what im doing this weekend

theme: meatloaf cupcakes
 



It's cool and cloudy and I wanted something hearty to warm me up, but also something cute to improve my mood. And so, I give you: meatloaf cupcakes (with mashed potato frosting)!

Meatloaf cupcakes - makes 6

Cupcakes:

1 lb lean ground beef
1 egg
1/2 a large onion, finely chopped
1 large clove of garlic, minced
1 large handful of oats
salt, pepper, ketchup, and Worcestershire sauce to taste

Glaze:

1/4 c ketchup
1 tbsp brown sugar
dash of Worcestershire sauce

'Frosting':

2 medium sized potatoes, peeled and cut up
skim milk
butter

Pre-heat oven to 375F. Beat egg, then add all other 'cupcake' ingredients and combine. Add the meat and mix well. Form into 6 balls and press into cupcake tin. Mix glaze ingredients together and spoon over each loaf, then sprinkle a little more pepper overtop. Bake for 30 mins (place a cookie sheet under the muffin tin in case there is grease leakage), until insides read 160 on a meat thermometer.

Meanwhile, put the potatoes on to boil. When fork tender, drain and mash, adding milk to achieve desired buttercream-like consistency, and butter to taste if desired. When the loaves are done, remove them and increase heat to 400. Using a piping bag, 'frost' the loaves with mashed potato, then return them to the oven for 5-10 minutes (watch carefully), until the tops begin to turn golden brown - mine could be browner but I was impatient and hungry!
